This is a Grade 2, fully washed coffee from the Chelelektu Washing Station in Kochere. Chelelektu receives cherry from over 650 local smallholder farmers, most of whom cultivate less than 2 hectares. After delivery, the cherries undergo careful sorting and pulping before fermenting for 36-48 hours. The parchment is then thoroughly washed and graded by density before being dried in the sun on raised beds for 12-15 days.
The town of Chelelektu is amongst the highest altitudes in the region, and has developed a reputation for fine coffees. The combination of high altitude (up to 2,200m in some areas), fertile soil, consistent and plentiful rains, and an abundance of local knowledge are all contributing factors to the high status of Yirgacheffe coffees.
For a washed coffee this one is super fruit forward. So good.
